Coconut Cake

Coconut Cake

110g Caster Sugar.
110g Soft Margarine.
225g S.R Flour.
2 Eggs.
60g Coconut soaked in 1/4pt milk of 15minutes.

1. Mix together caster sugar, soft margarine, S.R.flour and eggs.
2.Fold in coconut and milk mixture.
3.pour mixture into a 2lb lined loaf tin.
4.Cook for 1 hour 15 minutes at 160 c.

Can't remember where this recipe came from I have been using it for many years.

Tomatoes

Day 17 of 1001.

My tomato plants are doing very well, I potted two types of seeds Garden Pearl and Maskotka, both ideal for baskets and containers. Planning on having 4 baskets and 4 containers of each type. Hoping the weather gets a bit warmer this weekend so I can plant them out.

To do this week.

Day 15 of 1001.
I have listed things I want to do each day and an not currently achieving. So each week I am looking to :

Drink 1 pint of water a day.
Eat five a day.
Write in gratitude journal daily.
Have 3 NSD's a week.
Keep all receipts.

Sunday will be my start of the week so today I have move £2.45 to learning account and I have got on the scales and my weight is 9st 12lb.

Starting from today I am goint to give up chocolat/sweet things for a week, so hopefully next Sunday I will have lost a few lb's.

Tasks in progress.

De cluttering of loft and garage has began, took a car full of stuff to the local tip in the week and gave some household items to a young girl who is setting up her first home from the loft. Load still in garage and loft however a start has been made.

The bathroom has been given a coat of white paint by OH,the paint that we found in the garage and now is white with a hint of mint, very pleased as we did not have to buy paint so saving some money.

I have started to write up my allotment/garden diary and now have a record of when I planted the seeds and also the variety of seed, and I will record if we liked the variety and how much was produced.

Have planted 10 asparagus crown, looked at them yesterday evening and they are starting to grown. Need to read up on asparagus growing.

Transplanted 6 sugar snap pea plants that I grew in the greenhouse into a large tub with canes for the peas to climb, they are looking health, keeping my fingers crossed that they will grow and produce a crop.

54 Completed.

Task 54 is completed. Opening the ISA was an easy task call into the bank yesterday morning and they had a free appointment just after lunch, opened ISA with £50.00 and will save £5.00 for every future task completed.

101 Things in 1001 Days

The Mission:
Complete 101 preset tasks in a period of 1001 days.

The Criteria:
Tasks must be specific (ie. no ambiguity in the wording) with a result that is either measurable or clearly defined. Tasks must also be realistic and stretching (ie. represent some amount of work on my part).

Why 1001 Days?
Many people have created lists in the past - frequently simple goals such as New Year's resolutions. The key to beating procrastination is to set a deadline that is realistic. 1001 Days (about 2.75 years) is a better period of time than a year, because it allows you several seasons to complete the tasks, which is better for organising and timing some tasks such as overseas trips or outdoor activities.

Some common goal setting tips:
1. Be decisive. Know exactly what you want, why you want it, and how you plan to achieve it.

2. Stay Focussed. Any goal requires sustained focus from beginning to end. Constantly evaluate your progress.

3. Welcome Failure. Frequently, very little is learned from a venture that did not experience failure in some form. Failure presents the opportunity to learn and makes the success more worthy.

4. Write down your goals. It clarifies your thinking and reinforces your commitment.

5. Keep your goals in sight. Review them frequently, and ensure that they are always at the forefront of your thinking.
